Paul Covalesky emphasizes eating locally and organically BY MEGAN WALSH (STAFF WRITER) Published: December 6, 2009 Dalton resident Paul Covalesky emphasizes eating locally and organically in his new cookbook, "Paul's Kitchen: A Collection of Best Loved Recipes Using Ingredients From Your Own Garden."
Mr. Covalesky developed his love of cooking while growing up in Lackawanna County. "At an early age I had the pleasure of working alongside my parents, as well as my grandparents and uncles who had a working farm," said Mr. Covalesky.
Mr. Covalesky earned an associate of occupational studies degree from The Culinary Institute of America and worked at The Peabody in Orlando, Fla. He now works in the healthcare industry, which has led him to focus on eating healthy and organic foods. "Using fresh ingredients that can be found in any garden, farmers' market and health food store will always benefit you," said Mr. Covalesky.
"Paul's Kitchen" is full of recipes that use garden-fresh ingredients. A few such recipes are: sauteed chicken breast with a pepper, olive and tomato salsa; cheese tortellini with a sun-dried tomato and crab cream sauce, served over a bed of fresh spinach; and apple crisp with cinnamon, oats and walnuts.
"Paul's Kitchen" has everything from appetizers and pasta to duck and holiday cocktails all presented with easy-to-follow directions.
