I have over 100 cookbooks..most are "regular" cookbooks, but also began hoarding GFCF cookbooks two years ago when I put my child on the GFCF diet. After you buy so many, they kind of blend in together and become kinda similar. I thought this book was a bit pricey, but went ahead and ordered it. This book appears to be very unique. I am a HUGE coconut lover and think it is a wonderful sub for products he can no longer have. I love that she uses coconut milk, oil, etc. I made the banana bread last night and it tasted just like "regular" banana bread! I sliced it and served it to my son for breakfast this morning with turkey bacon and he loved it! I individually froze thick slices of this for future use :) I can't wait to try the quiche recipe and many others. They only drawback is the specialty stevia which is not as accessible in stores. For the bread, I just used stevia extract (2 drops) and it turned out fine. Also, the cookies are made out of left over soaked nuts from making nut milk, and we buy Rice Milk in a box, so we would have to soak our own nuts, which can be rather expensive. Other than this, this is a VERY unique cookbook. I can't wait to try more!

I was SO excited to buy this book! It provides you with so many different recipes as well as different cooking techniques. The only reason I did not rate this book with 5 stars is because of the different forms of sugar the author uses. There are quite a few kinds, some of which I do not have access to buy unless I get them offline. It is easy though to substitute and still get the same result though! Overall, I am really happy I bought this cookbook!

All of these recipes are delicious and easy to make! I am a beginning cook and VERY beginning gluten and caesin free cook. All of Brozyna's recipes are straightforward and so close to the original gluten, dairy and sugar filled versions I can barely tell the difference. THE BEST GLUTEN, CASEIN AND SUGAR FREE FOOD I HAVE EVER HAD!

I ordered "The Spunky Coconut Cookbook" as part of an effort to reduce the carbohydrates in my diet, the idea being that, if I could substitute for flour and/or sugar, I would be able to use fewer carbs and still have my husband like what I cook. I have never been able to lose weight without skipping as many carbohydrates as possible.

The book did not fulfill its purpose for three reasons. First, there was no nutrition information with the recipes. Second, all of the recipes called for ingredients not in ordinary household pantries or even in local stores. And third, some of the recipes call for equipment many kitchens, including mine, don't have.

This is not the fault of the book, but rather of my expectations. The author cooks for her family that has huge allergy and digestion problems. She is managing to keep her family healthy without their feeling deprived. The recipes sound absolutely yummy. The book has gorgeous tempting photographs. If the book goes into a second printing, I would hope it would include nutrition information with every recipe - and also, if possible, glycemic index information. I heartily recommend the book for families dealing with such things as celiac disease, autism, "leaky gut," and hard to manage undiagnosed disorders. Just be warned that you will have to redo your whole pantry. If the book had nutrition information, I would have given it five stars despite not being able to use it myself.
